100% wholemeal flour. This is a difficult dough to handle due to the effect of the high bran content. We use a blend of organic roller milled wholemeal wheat from Shipton mill and organic stoneground wheat from Cann mill in Dorset; lots of water (just below 100% hydration); and lots of folds early in the bulk fermentation. We've also switched over to a circular shape allowing the loaf to pop beautifully in the oven.
